Blend of melon de bourgogne (indeed the grape that - at the beginning of the eighteenth century - came from Burgundy) for freshness and drinkability and twenty percent folle blanche, a very tasty and aromatic grape that is rather fragile and after the devastation of phylloxera in the nineteenth century hardly got replanted. This is what with all respect is called oyster water, because it pairs so well with oysters - in other words, because the oyster likes to swim in it. Fresh and slightly salty, with a gentle punch of citrus. Very delicious, without oysters too (because perfect for aperitif and with salads, pastas and fish).
