Top garganega, with two weeks of skin maceration; the Italians call this 'bianco macerato'. This way it gets that bite that makes it so incredibly good with food (risotto with mushrooms, sushi, paella) - Italians almost never drink wine without eating something with it. Complex and layered, but not heavy. Has matured in wood for a year, and then another year in the bottle in the cave. Great wine.
