If you press those grapes and you don't let the most come into contact with the skins afterwards, your wine will be, ofcourse, white. By soaking 20% of the skins in the most for six weeks, Juan made it into orange… And the great thing is, it is the colour orange, it tastes like orange, and has the structure of orange. Fresh, very elegant and very tasteful. A hit in the metropolitan wine bar Glouglou for years. Also brilliant with grilled or not grilled sardines.
